What I have done alot this year as I have grown quite a few is just slice them fairly thinly, spray a flat baking tray with some oil / 1 cal spray, lay the slices om the tray, spray again with 1 cal oil spray, sprinkle some salt on and bake for 25-30 mins at 180-200C... they become soft and taste delicious... I often eat them as they are or add them to cous cous&amp;nbsp; or rice with other things... fresh herbs / green lentils / baked peppers / spring onions and salad stuff.... Yum.
