1 turnip

1 onion

2-4 tsp chilli flakes (depending on how hot you like it)

1L veg stock or stock cube

Boil all together, add salt & pepper to taste then add a tub of mascarpone cheese. Mix well with a wee sprig of parsley for fun!

This creation also tastes good.

Recipe: Carrot, Orange & Coriander Soup

To feed 3 people

Need:

Carrots - lots of (enough to fill a blender about 3/4 full) (about 30 - 50p/worth of value ones!)

Alpro single soy cream - circa 60p/carton (will need 1/2)

1 orange (25-30p)

fresh or dried coriander (dried - very very cheap - c2p!)

1 - 2 onions (about 10p - value ones)

1. Wash/peel/chop/boil the carrots until tender.

2. Chop/fry the onions.

3. Juice the orange.

4. Add the carrots, onions, orange, coriander (to taste - be reasonably generous with the dried stuff and just keep adding to taste) and blend.

5. Allow to cool slightly - leave about 10 minutes and have a glass of wine/Baileys - then return turn the blender on and add the soy cream slowly. Add 1/4 of the carton and then taste. If required add further cream to taste.

Serve with granary rolls.

Re: Food

I make a coconut-chilli-sweetpotato sauce that can be a soup or a curry-base depending on how thick you make it. Its my own creation to it varies abit each time but basically for enough sauce for about 3 people:

1/2 bag of value sweetpotatos (or a bit more)

1 tin chopped tomatos

1 deseeded chili pepper (I use the dried ones you get in big bags from Tesco for <£1)

2 onions

Handful of cashnew nuts

seseame oil

fresh (or dried) ginger - to taste

chinese 5 spice - to taste

1 carton of dairy-free coconut cream

1. Peel/chop/boil to tender the sweet potatos.

2. Chop onions & fry in sesame oil. Add ginger (fresh) + chopped chilli and fry for further minute. Add the dried spices and fry for further 30seconds or so.

3. Put all the above ingredients in a blender and blend with the tin of tomatoes, cashews and the coconut cream.

4. Add water as required to aid blending and adjust thickness.

5. Taste and add further dried ginger and/or five spice to taste.

Warning: the dried chillis are very hot. Underseason and top up later if needed with a sprinkle of chilli powder.

This makes a fab 'dinner-party soup' with a swirl of coconut cream on top or, slightly thicker, it makes a fab base for a thai-type currey. Tofu goes well with this and I would marinate the tofu overnight in soy sauce and ginger marinade and then fry. I then add some more cashews or chickpeas.

Any leftovers also make a fab jacket potato topping.

Re: Food

Does anyone know a good curry recipe??? not an Indian curry, just a basic curry

Re: Food

tonight I am having real comfort food. its a sort of eggy cheesy rice pudding (Carolyn knows the one!) with a load of tomatoes and oven chips.

boil and drain your rice and let it cool (a boil in the bag rice is sufficient for 2 people) - it must be cool or the eggs scramble when added. Add 3 eggs or 4 if you want it really rich and approx 1/4 pint of milk. Make sure the eggs are well beaten. Gently mix in approx 150g of grated cheese. stick the whole lot in an oven proof dish, or mix it up in one in the first place and put in a hot oven for approx 40 mins keeping the top covered for the first 35 so it dont burn. take off the cover and allow to brown for the last 5 mins adding extra cheese to the top if required. Alternatively shove in the microwave on medium for 10 mins ( watching out that it doesn rise too much and escape the bowl) and then brown under the grill for a few minutes - again adding extra cheese if wanted.

Re: Food

This one is for non vegans ore vegetarians.

Bacon and chilli pasta

8 slices of bacon

1 tin of tomatoes with chillis...only ever seen these in Asda

Couple of peppers

1 medium onion

200grams of mature chedder

1tsp medium chilli powder

1tsp oregano

pasta 8 handfuls

serves four people

cut bacon into squares and chop onion, fry in a little olive oil or vegetable oil, add chopped peppers and tinned tomatoes, then add chilli powder and oregano, leave to simmer for about 10 mins, Grate cheese

Cook pasta, drain, then add the sauce, then the cheese and mix together

Takes about 10 mins prep and 15 mins cookin time. Brilliant when you are in a hhryy or just can be gassed cooking.

This 'no-cook cake' is sweet, sickly and a doddle to make - absolutely fantastic!

Ingredients

8 oz biscuits, crushed
4 oz vegan marg
1 tbsp golden syrup
1 dessertspoon cocoa
2 dessertspoons drinking chocolate
1 dessertspoon sugar
100g bar of plain vegan chocolate

Notes

Rich Tea style biscuits work well in this recipe (check the packet to make sure they are vegan). Try it with ginger biscuits too.

Method

Melt everything except the biscuits and chocolate gently in a large pan. Take off the heat, add the biscuits and mix well.

Pile the mixture onto a small, greased baking tray and press down firmly with your hands. (If you haven't got a small baking tray, use a standard one but only press the mixture into half of it.)

Melt the chocolate and pour over the top of the cake. Put in a fridge or cool place for one hour to set. Cut into slices to serve. Yum!
