Mixture should be slightly moist , not runny,and crumbly. cover over the top of the tin with greaseproof paper to prevent it drying out too much&amp;nbsp;whilst cooking and cook for an hour to an hour and half in a medium oven. If you prefer a more moist loaf some people cook in a bain marie but I think it is an unecessary faff!&lt;/p&gt;
&lt;p&gt;when it is cooked you should be able to stick a skewer in it and it comes out clean or very nearly clean, if there is any goo on the skewer it needs longer.
