I was wondering if anyone might have experience in this kind of situation?
We received new contracts at work and one of the clauses stated that if we did not sign by a certain date we would be dismissed.

I believe they do not need to make you redundant as they are offering an alternative role. I believe technically therefore its correct that your employment will end if you don't accept the change in contract as your previous contract will have been terminated and replaced. This is on the assumption your current/previous contract warms changes could be made etc which is generally the case or your employer has changed ie owner to break contract and start a new.

There is loads of Acas about what to do if you dobg agree with contract change. For example https://www.acas.org.uk/changing-an-employment-contract/employees-if-you-do-not-agree-to-changes
