If you haven't already check out what the WVS (Worldwide Veterinary Service) have to offer as they have loads of trips on offer - never tried one myself but they always look great :)

I volunteered a few times with a NZ based charity SPAW on tonga (a pacific island) and I'm now totally hooked- I saw an advert for The Greek Cat Welfare Society (spay/neuter clinics on greek islands) which looked liked good fun- if you can relax between feral cat handlings ;)
