I am in the process of going through the protocols at work and have been thinking about the way that we clean the floors. We sweep and then mop - the issue being that we are not shut for any period during the day. I.e. rotowash which scrubs the floor and removes the dirty liquids and residues, Burtons also used to sell a steam machine that did the same. The only problem is that they require an investment of £1500 - £2000. I throw a small towel on the floor and push it around with a rubber broom.
