Hmm, well I threw a little something together. If that's okay :)

'Flying high on angel wings,

Laughing when the birds sing.

Sun is shining bright and new,

And you could maybe have the artist decorate it with little birds around it and some falling petals. Or something. Ignore me if it's too cheesy or something. Just picking my brain a bit :) Alternatively I thought of something a little shorter which could be nice in a lovely script:

'Every day I'm missing you,

But every day I think of you.'

Anyhow, just some thoughts :)

As lovely as the phrase about not giving up is, to me it suggests more that you personally have overcome something, as opposed to being a memorial statement.
